Eggplant Hasselback
A healthy take on the classic Hasselback
Ingredients (Serves 4)
- 2 large eggplants
- 6 tomatoes
- 2 onions
- Zola Foods Basil (250g)
- 5 garlic cloves
- 2 pieces Mozzarella cheese
3 tablespoons breadcrumbs
3 tablespoons parmesan
Salt
Pepper
Directions
Pomodoro Sauce
1) Sautee onion in oil until brown (on low heat)
2) Add 3 cloves of minced garlic
3) Add 3 grated tomatoes and simmer until cooked
4) Add 1 tablespoon of chopped basil
5) Salt and Pepper to Taste
Hasselback
1) Slice aubergine vertically
2) Sprinkle with garlic, salt and pepper
3) Alternate tomatoes slice, basil, and mozzarella slice in each eggplant slice
4) Spread baking tray with Pomodoro sauce
5) Place filled eggplant and cover with foil onto the tray and bake for 45-50
minutes until cooked
6) Top with parmesan and breadcrumb (3:3 ratio) and leave for 10 minutes
For some extra protein - accompany with a pan friend chicken breast or steak.
